It is so lovely to have a friend across the pond, Emily is a college athlete who shares her journey with her followers on her Instagram page. She showcases so many eatery’s in the US and i really enjoy following her on her journey!
For this reason, she is my spotlight for this month. Here’s what she had to say in my Q&A…
1. What are you allergic / Intolerant to?
I am allergic to peanuts, tree nuts (except coconut and macadamia nuts), and gluten.
2. What is your favorite meal that you can safely eat?
My favorite meal is gluten-free pasta with homemade nut-free pesto and grilled chicken.
3. Why did you set up your blog / Instagram page and what do you hope to achieve from it?
Right before I left for college I suffered a scary allergic reaction and struggled with post-reaction anxiety and poor mental surrounding my food allergies through out my freshman year of college. After going to therapy and working to improve my food allergy anxiety, I was inspired to start my blog to share more about my experience and create a place of positivity around eating with food allergies. My blog has helped me significantly through out my recovery own process in challenging me to try new foods & products and speak up about my allergies. My hope is that it help/ other people with allergies feel empowered and positive about what they can eat!
4. What is your favorite piece of advice for people that have allergies?
My favorite piece of advice for those with allergies is to not be afraid to ask for help and support! There are so many great allergy blogs and resources, and everyone has a unique perspective to share about their food allergies. Don’t be afraid to reach out for help in the community and learn from other’s experiences!
5. We are all people behind our allergies, what would you say is the one most interesting non allergy related fact about you?
One interesting fact about me is that I’m a college athlete! I currently play collegiate water polo and love to weight lift, swim, run, and hike in my free time!
